The Finishing Touch to a PERFECT Steak

Our delicious steaks are preseasoned, prepared medium-rare, and flash-frozen for freshness. That way, you can finish it anyway you want - You won’t get it fresher - or more convenient - than that!

STEP 1
Remove the loin(s) from the freezer.

STEP 2
Place in the refrigerator for 24 hours or until thawed, whichever is sooner. This will allow the loin to absorb the cooked juice to enhance the flavor.

STEP 3
Once thawed, remove the loin from the vacuum-sealed packaging and place the loin on a paper towel. Pat the top and sides of the loin to remove all excess moisture on the meat. Change the paper towel, if necessary, to get the moisture off the underside of the loin. This will work to maximize the effects of heat on the loin and reduce final cooking time.

STEP 4
Season your steak: Try seasoning with generous amounts of sea salt, freshly ground pepper and organic garlic powder - the powder should be last to seal in the juices during the finishing process.

STEP 5
Finish it off your way!
Cast Iron Sear (Preferred)
Add one tablespoon of clarified butter or pasture- raised dairy butter to pan and turn burner on high. Distribute butter evenly with a brush or other utensil. When the pan is nice and hot, place the loin in the pan. Sear for 3 minutes on each side. Let rest for 5 minutes before serving.
For better fat rendering, use tongs to hold the loin while searing all around the sides of the loin.
Broiling
Brush clarified butter or pasture-raised dairy butter on all surfaces of the loin. Broil for 3 minutes on each side, making sure the loin is no more than 3 inches away from broiler. Let rest for 5 minutes before serving.
Grilling
Set the grill to high heat for at least 15 minutes so the grates become nice and hot. Brush clarified butter or pasture-raised dairy butter on all surfaces of the loin. Grill for 3 minutes on each side. Let rest for 5 minutes before serving.
Tasty Tip
Substitute butter with organic avocado oil, which has a smoke point of 520° F.
